The Preface To Cups And Their Customs 1863

Cups and Their Customs was first published in 1863, and was written by George Edwin Roberts and Henry Porter. The majority of the book is made up of an ‘ambling’ discussion on the history of drink, and compound drinks, first in ancient Europe and then latterly Britain – some of it very entertaining and interesting. However, in the last part of the book there are some notable recipes, split between ‘old recipes’ and ‘new recipes’ (new in the sense of Victorian 1800s drink recipes) and many of these are easy to follow and recreate.

The authors describe their work thus: “The principal object of these pages is to furnish a collection of recipes for the brewing of compound drinks, technically termed “Cups”, all of which have been selected with the most scrupulous attention to the rules of gastronomy, and their virtues tested and approved by repeated trials … In doing this, we have endeavoured to simplify the matter as much as possible, adding such hints and remarks as may prove serviceable to the uninitiated, whilst we have discarded a goodly number of modern compounds as unpalatable and unscientific”.
