Marmalade Cake
This recipe works wonderfully well with your favourite type of chunky marmalade, either a traditional orange or a lemon one.
Marmalade Cake Recipe
Recipe Ingredient:
- 40g glacé cherries
- 100g softened butter
- 100g caster sugar
- 100gg sultanas
- 100g currants
- 2 large eggs
- 175g self-raising flour
- 2 tbsp chunky marmalade
For the marmalade glaze
- 2 tbsp chunky marmalade
Recipe Method:
Preheat the oven to 160°C
Grease a 900g (21b) loaf tin and line the base with baking parchment.
Cut the cherries into quarters and add them to a large mixing bowl, measure out all the remaining ingredients and also add. Mix well until the mixture is blended into a cake batter. Spoon the cake batter in to the prepared loaf tin and level the top off.
Bake the cake in the preheated oven for about 1 and 1/2 hours (90 minutes) at 160C – or until a skewer inserted into the centre of the cake comes out clean.
Take the Marmalade Cake out of the oven and leave to cool in the tin for 10 minutes, then turn it out. Peel off the baking parchment and finish cooling on a wire rack.
To finish, warm the marmalade glaze in a small pan, and then spoon and spread over the top of the cake and leave to set. Serve.
