Spiced Pear & Walnut Muffins
These great tasting and smelling Spiced Pear and Walnut Muffins are a bit different, and a bit Christmassy, something to have with a cup of tea or coffee in the morning in the Holiday Season. These muffins are best served warm at breakfast, and will fast become a holiday favourite. They are moist, nutritious, really tasty and hearty, so just right for setting you up for the day ahead. You can make the ‘dry’ ingredients up well in advance, and store the mix in an air tight jar, for a quick and simple breakfast.
They can also be gently re-heated during the day, if taking them to work.
Spiced Pear & Walnut Muffin Recipe
Makes 12 – you will need some muffin moulds / tins
Recipe Ingredients:
For the muffins
- 250g plain flour
- 125g natural yogurt
- 75g butter, melted
- 3 comice pears, peeled and finely chopped
- 3 free-range eggs
- 125g caster sugar
- 125ml milk
- 60g walnuts, finely chopped
- 1 tsp cinnamon
- 1 tsp mixed spice
- 2 tsp baking powder
For the crumble top
- 75g rolled oats
- 1 tsp cinnamon
- 3 tbsp demerara (brown) sugar
- 50g unsalted butter, melted
For the drizzle
- a small drizzle of runny honey on each muffin
Recipe Method:
Preheat the oven to 180C
Mix the (wet ingredients) eggs, yoghurt, milk and melted butter together with the peeled, chopped pear. Next mix the (dry ingredients) walnuts, flour, mixed spice, cinnamon, baking powder and sugar together.
Fold the wet ingredients into the dry ingredients, and mix until just combined (do not over mix). Grease some muffin moulds or tins and fill with the Spiced Pear Muffin Mix.
For the crumble topping, combine all of the ingredients in a bowl and mix well with the melted butter. Sprinkle the crumble on top of each the muffins. Bake for 15-20 minutes until risen and pale-golden. Leave to cool on a cooling rack and then drizzle over a little honey while warm (not too much).
Serve the Spiced Pear and Walnut Muffins warm for breakfast, with a cup of tea or coffee.
