Cacao nibs come from the cacao beans which are roasted, cracked and then de-shelled by a ‘winnower’ – the resulting pieces of beans are called ‘nibs’ and are usually sold in small packages at speciality stores and markets to be used in cooking and chocolate dishes.
Golden Kiss Cocktail
Ingredients: Makes 1 Drink.
- 30ml cold chocolate vodka
- 120ml chilled champagne
FOR THE CHOCOLATE VODKA
- 100g cacao nibs
- bottle of vodka 750ml
Directions: Toast 100g of cacao nibs in a dry skillet or dry frying pan (on a medium heat for a minute or two). Allow them to cool and then pour them into a bottle of good quality vodka. Set this aside for a week. Strain out the nibs and place the vodka into the freezer to chill – when you want to serve the drinks. A Golden Kiss combines 30ml cold chocolate vodka and 120ml chilled champagne in a champagne flute.
