Baileys & Chocolate Cream is a simple, easy to make, great tasting dessert which can be made up in advance of serving. Made and served in a Martini glass this looks great. Only a few spoonfuls of this rich and creamy dessert are needed to end a romantic meal – and being made up and chilled in the fridge for a few hours in advance it means that the meal can end on an uninterrupted note. Amaretti biscuits are used here but ginger snap biscuits are also recommended.
Baileys & Chocolate Cream
- 60g dark chocolate (70%)
- 200ml double (thick) cream
- 4 tbsp Baileys Irish Cream
- grated milk chocolate for dusting (or sprinkles of your choice)
- amaretti biscuits to serve and glaze glass rim
- small amount of honey to glaze glass rim
- 2 Martini cocktail glasses (or similar) are needed
- a piece of card with a heart shape (or similar) cut out
Glaze the Martini glass rims: break up two ameretti biscuits into almost dust in a bag, or cloth, tip this on to a plate and spread it out. Dab a little honey on your finger and run it around the rim of each martini glass, before dipping it into the broken biscuit to coat. Retain the remaining broken biscuit for later.
Break up the chocolate into quite small pieces and place it in a heat-proof bowl. In saucepan mix the double cream with the Baileys Irish Cream and then reserve about 6 tbsp in a small bowl. Put the remaining baileys and cream on the hob to heat and then slowly bring this up to the boil, stirring all the while. When just to the boil take the cream off the heat and pour it into the bowl with the chocolate. Stir it in until all the chocolate has melted and mixed in thoroughly with the cream.
Allow this to cool slightly then pour this chocolate and cream equally into the two decorated Martini glasses. Allow to cool fully. Whip the remaining cream and Baileys until thickened, then spoon over the cooled chocolate mix. Chill these glasses in the fridge for at least an hour to set.
Use a heart shaped object (like a cookie cutter) to mark out with a pencil the shape you have chosen on a piece of card and cut this out. When ready to serve take the glasses of Baileys & Chocolate Cream out of the fridge, hold the card over the top of the glasses, and carefully dust over the remaining biscuit and then either grated chocolate, sprinkles of your choice, or cocoa powder to make the shape on top of the cream. Then serve with a spoon and another whole amaretti biscuit.
