Stilton & Honey-Roast Peaches
A beautiful looking dish, with both strong and subtle flavours – simple and quick to make, with a big impact as a starter.
Stilton And Honey Roast Peaches Recipe

Recipe Ingredients:
- 4 ripe peaches
- 75g unsalted butter
- a handful of fresh thyme branches
- 7 tbsp honey
- 150g Stilton Cheese
Recipe Method:
Preheat the oven to 200C
Halve and stone the peaches and sit them in an oven-proof dish or tray (lay them cut side up and nestling against each other).
Onto each of the peach halves add a generous knob of butter and sprinkle over some fresh thyme leaves. Then drizzle over 3 tbsp of honey. Lay a few whole thyme branches on top, over them all.
Put the peaches into the oven and roast at 200C (approx 15 minutes) – you only want to take the peaches out of the oven when the flesh seems just about to collapse and they have begun to caramelize.
In a small saucepan add the 4 remaining tbsp of honey and sprinkle in a generous amount of fresh thyme leaves. Gently heat the honey through without boiling, for 10 minutes. Then leave to cool.
On each serving plate cut and place fine slices of Stilton Cheese, drizzle over the cheese a little thyme infused honey and place two roasted peach halves.
